Ingredients for 2 servings:

  • 1 cup rice (Thai fragrant rice)
  • 1 tbsp butter
  • 1 tsp oil
  • ½ onion(s), chopped
  • 1 cup mixed seafood, ready to fry
  • 2 eggs
  • some oil
  • ½ cup vegetables of your choice (e.g. red, yellow, green peppers, carrots), finely diced
  • 2 tbsp spring onions, chopped
  • Cucumber slices for garnishing
  • Broth, granulated
  • Soy sauce, light
  • Sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Thai seafood fried rice

Cook the rice without salt until just cooked; it should still have a good bite. Whisk the eggs with a little light soy sauce. Scramble the eggs in a little hot fat and set aside. Heat the butter and oil in a large pan and sauté the onion. Add the diced vegetables and sauté until soft. Season well with plenty of granulated stock (instead of salt), a little light soy sauce, and about 1/2 tablespoon of sugar; you don’t want to add any more seasoning to the rice later. Add the seafood and stir-fry for a few minutes. Be careful, it must be dry, or the rice will overcook! Pat dry with kitchen paper if necessary. Now add the rice and fry for a few minutes, stirring constantly. Mix in the egg and chopped spring onions, season to taste, then garnish with cucumber slices and serve.
