Ingredients for 3 servings:
- 1 kid leg(s), 900 g
- 2 jars of okra (400 g each)
- 1 tsp, heaped onion granules
- 6 vine tomatoes
- 1 clove(s) garlic, Chinese
- 1 tsp cayenne pepper
- 2 tbsp olive oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Drain and rinse the okra. Finely dice the garlic clove and toss with a little olive oil. Slice the tomatoes. Preheat the oven to 200°C (top/bottom heat). Place the tomato slices in a baking dish. Make sure the bottom of the dish is covered. Sprinkle the onion granules over the okra, then arrange the okra on top. Drizzle with the garlic oil and sprinkle with the cayenne pepper. Place the leg on top of the vegetables and brush with oil. Cover and cook for 30 minutes, then roast uncovered for another 30 minutes, until the meat falls away from the bone.
