Ingredients for 4 servings:

  • 500 g flour
  • 4 eggs
  • 100 ml cream
  • 1 tsp salt
  • Fat for frying, e.g. sunflower oil or palm oil
  • Flour, for dusting

Instructions

Working time approx. 2 hours; Total time approx. 2 hours

Knead the ingredients into a dough roughly the consistency of pasta dough. Knead by hand until bubbles appear. Then divide into small portions, roughly the size of a small apple. Dust each portion well with flour and run it through the pasta machine. Start on speed 1, folding the dough over and over again and running it through the pasta machine. Then gradually run it through all the speeds up to the finest speed. Dust with flour occasionally to prevent sticking. Alternatively, the dough can be rolled out “until you can read a newspaper through it.” Cut the dough into approximately 10 cm squares and fry in boiling fat, then drain on a wire rack. These delicate cakes are typically eaten with fresh apple cider and/or apple sauce. Note: Typical local recipe from around Furtwangen for the Kilwi (church fair), which is always celebrated on the third Sunday in October in the Black Forest.
