Ingredients for 1 servings:
- 1 package of puff pastry
- 125 g butter
- 125 g almonds, grated
- 125 g sugar
- 2 eggs
- 1 egg yolk
- 1 tsp, heaped cornstarch
- 3 drops of bitter almond flavor

French version of the Epiphany cake, for 6 pieces
Grease a shallow pan with butter and line with puff pastry. For the filling, melt the butter and mix it with the sugar, ground almonds, cornstarch, eggs, and bitter almond flavoring. Stir the filling thoroughly and spread it on the puff pastry. Then cover the cake with a puff pastry lid, sealing the edges to the base with the egg yolk. Brush the cake with the remaining egg yolk and poke a few air holes in it with a fork. Bake for 15-20 minutes at 175°C. Traditionally, a coin or porcelain figurine is baked into the cake on Epiphany. Whoever finds it in their piece is king of the family for a day. But it’s also delicious any day.
