Koelkast's zucchini fritters

Ingredients for 4 servings:

  • 3 small zucchini (approx. 300 g)
  • 2 large potatoes (approx. 300 g)
  • ½ onion(s), finely grated
  • 2 eggs
  • 100 g low-fat curd cheese
  • 50 g oat flakes
  • 1 tsp salt
  • pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

We have had it for years, the recipe comes from a cooking class long ago, and children also like it

Grate the zucchini and potatoes relatively finely using a vegetable grater. Add the grated onion. Mix in the eggs, quark, oats, salt, and pepper. Let the mixture swell for 30 minutes, then fry three pancakes in hot clarified butter in a pan for 3-4 minutes per side until crispy. Drain on kitchen paper and serve. It’s also a favorite with kids.
