Köttbular on Barley and Turnip Bed

Köttbular

  • 500 g Mixed minced meat
  • 1 Egg
  • 0,5 tsp Smoked peppers
  • Salt
  • Pepper from the grinder
  • Sugar
  • 0,5 tsp Ground cumin
  • 1 tsp Mustard powder
  • 2 Knife point Cinnamon
  • 2 tbsp Raspberry jelly
  • 4 Splash Worcester sauce

Pearl barley turnip bed

  • 1 Turnip
  • 1 Cup Pearl barley
  • 1 Onion
  • 1 Lemon
  • Salt
  • Pepper from the grinder
  • 200 ml Beef broth
  • 1 tsp Thyme
  • 1 tsp Brown sugar
  • 2 tbsp Butter
  • Olive oil

Köttbular

  1. Mix the minced meat with all the spices (except Worcestershire sauce and raspberry jelly) and stir in the egg and plenty of salt, sugar and pepper.
  1. Shape the balls and fry them with a few drops of oil in a hot pan. As soon as the balls are browned, add the raspberry jelly and Worcester sauce and glaze everything.

Pearl barley turnip bed

  1. Bring the grains to the boil with 3 cups of water, allow to swell, drain and set aside.
  1. Peel the turnip and cut into small cubes. Peel the onion as well, chop it finely and sauté with a few drops of olive oil.
  1. Add the turnip cubes and deglaze with the stock – steam under a lid for 5-10 minutes.
  1. As soon as the liquid has evaporated, add salt, pepper and sugar and caramelize everything lightly.
  1. Refine with thyme and add pearl barley. Season with lemon juice and round off with butter.
