Ingredients for 4 servings:

  • 400 g leaf spinach, chopped
  • 2 stalks of coriander
  • 2 stalks of parsley
  • 2 sprigs of dill
  • 1 bunch of spring onions
  • 6 eggs
  • salt and pepper
  • ¼ tsp nutmeg
  • 125 g flour
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Persian-style omelette

Chop the herbs, finely chop the spring onions, and puree them with the spinach. Whisk the eggs, season with salt, pepper, and nutmeg, and mix with the vegetables. Stir in the flour and let it swell briefly. Heat 2 tablespoons of oil in a large pan over high heat. Pour some batter into the pan and cook for about 2 minutes, until the bottom is light brown. Turn over and cook for another 2 minutes.
