Ingredients for 1 servings:

  • 160 g flour
  • ¼ pack of baking powder
  • 60 g sugar or sugar substitute
  • ½ bottle of butter-vanilla flavoring
  • ½ bottle of lemon flavor
  • 200 g soy yogurt (yogurt alternative), vanilla flavor or regular yogurt
  • 2 eggs
  • 80 g margarine
  • 5 plums

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash, pit, and slice the plums. Briefly mix the sugar or sugar substitute, eggs, butter and vanilla flavoring, and margarine. Stir in the flour, baking powder, and soy or regular yogurt; the batter should be firm. Grease the cups of a muffin tin or line them with paper baking cups, or grease a 20 x 26 cm baking tray or line them with baking paper. Fill the muffin tins only halfway, filling the baking tray 3/4 full. Arrange the plum slices on top. Bake in an oven preheated to 200°C (top/bottom heat) for about 30 minutes on the middle rack.
