Lamb chops with vegetables

Ingredients for 4 servings:

  • 800 g lamb chop(s)
  • 1 large onion(s)
  • 1 bulb(s) garlic, fresh
  • some butter
  • 7 potatoes
  • 1 m.-large zucchini
  • 1 jar of broad beans, approx. 360 g
  • some thyme
  • 1 tbsp, heaped stock, granulated
  • some paprika powder, sweet
  • some olive oil
  • 1 dash of ketchup
  • some salt and pepper
  • some sugar
  • 3 tomatoes
  • 1 pack of feta cheese

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 40 minutes

Brown the lamb chops with the onion and garlic in the butter. Season with salt and pepper and set aside. Peel and dice the potatoes, and cut the zucchini and tomatoes into pieces. Place everything on a baking tray. Drain the jar of broad beans and add the beans to the baking tray. Season with thyme, paprika, and a dash of ketchup. Add a pinch of sugar, a little olive oil, and the feta cheese, and mix to combine. Place the lamb chops on top. Cook in a hot oven at 180°C (fan oven) for about 1.5 hours.
