Lamb shanks

Ingredients for 4 servings:

  • 4 lamb shanks (lamb shanks), pre-order from the butcher
  • 2 carrots
  • 3 bell peppers, red, green, yellow
  • 5 onions, sliced
  • 3 cloves garlic, sliced
  • 1 can of pizza tomatoes
  • 3 red chili peppers, sliced
  • 1 tsp, heaped thyme, dried

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 20 minutes

Cooked in a Roman pot

Soak the Roman pot in water for 24 hours. Do not preheat the oven! Roughly chop the carrots, bell peppers, and onions. Finely slice the garlic and chili and add them to the canned tomatoes. Place the lamb shanks in the pot and spread all the ingredients on top. Cover and cook in the oven at 180°C (350°F) for about 3 hours. It’s done when the meat falls off the bone.
