Ingredients for 2 servings:
- 200 g lamb’s lettuce
- 1 avocado(s)
- 1 small onion(s)
- 1 bell pepper(s)
- 6 mushrooms
- 100 g date tomatoes
- 1 roll(s) of goat’s cheese
- 8 slices of bacon
- olive oil
- Balsamic vinegar
- salt and pepper
- Sugar
- chives

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cut the goat cheese into 2 cm thick slices, wrap in bacon, fry in hot olive oil, and remove from the pan. Finely chop the onions, peppers, mushrooms, and tomatoes and briefly sauté them one after the other in the pan. The vegetables should still have some bite. Halve and slice the avocado. Place in a shallow bowl and drizzle with balsamic vinegar and oil (a 1:4 ratio). Season with salt, pepper, sugar, and chives. Spread the warm vegetable mixture on top and carefully fold in the lamb’s lettuce. Finally, place the goat cheese on top. Serve with toasted baguette or ciabatta.
