Lamb's lettuce with bacon

Ingredients for 1 servings:

  • 100 g lamb’s lettuce
  • 50 g smoked bacon
  • 1 small onion(s), red
  • 1 tbsp white wine vinegar
  • 3 tbsp walnut oil
  • 1 tsp, levelled white cane sugar
  • 1 pinch of Dijon mustard
  • herbal salt
  • black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Trim and wash the lamb’s lettuce, then spin dry. Cut the bacon into strips or cubes. Peel and finely chop the onion. Combine the vinaigrette ingredients in a small, sealable container and shake well. Season to taste. Fry the bacon in a pan until crispy, then drain on kitchen towels. You can then decide whether you want to eat it warm, lukewarm, or cold, depending on your taste. Place the lettuce, onions, and bacon in a salad bowl, shake again, and then pour the vinaigrette over it. Finally, mix everything thoroughly. Serve with bread if desired.
