Lamb's lettuce with egg and bread croutons

Ingredients for 4 servings:

  • 500 g lamb’s lettuce
  • 2 slices of white bread
  • 1 egg(s), hard-boiled
  • 50 g Parmesan
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar, very good quality
  • 1 tsp mustard
  • 1 tsp butter
  • Salt and pepper from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim and wash the lettuce thoroughly. Shake out the water, chop the lettuce as desired, and place it in a bowl. Mix the salad dressing in a separate bowl; it’s easier with a blender. Combine the balsamic vinegar, olive oil, mustard, a pinch of salt, and pepper in a blender and whisk. Season to taste. Break the egg with an egg slicer and add it to the salad. Pour the salad dressing over the salad, fold it in, and serve on plates. Grate Parmesan cheese over the top. Cut the white bread into small cubes, heat the pan with butter, and toast until browned. Arrange the croutons over the salad.
