Leaf spinach with chickpeas

Ingredients for 4 servings:

  • 500 g fresh leaf spinach
  • 300 g chickpeas
  • 1 large onion(s)
  • 2 garlic cloves
  • 4 Pepper, green with cream cheese filling
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 pinch(s) of cayenne pepper
  • olive oil
  • salt and pepper

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Halve the garlic, heat it in a large pan or wok with a little olive oil, and fry for about 2 minutes until golden brown. Then remove and discard the garlic. Dice the onion and sauté it in the oil with the cumin, cayenne pepper, and turmeric for about 3-5 minutes. Add the chickpeas and stir until the spices are completely coated. Add the spinach leaves to the pan, spread it out, and close the lid. Heat everything on medium heat for about 30 minutes, stirring occasionally. Finally, add the green peppers with cream cheese filling and heat with the lid closed for another 4-5 minutes. I recommend basmati as a side dish.
