Lentil meatballs mom's way

Ingredients for 4 servings:

  • 2 cup(s) Lentils, red
  • ½ cup(s) bulgur
  • 3 ½ cups water
  • 5 spring onions, finely chopped
  • 3 onions, diced
  • e.g. paprika paste
  • e.g. tomato paste
  • 2 bunch parsley, chopped
  • Chili sauce (jalapeno sauce) or other hot sauce

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cover the lentils with 3 1/2 cups of water and cook until tender. The water should be absorbed by the lentils. Then transfer the warm lentils to a bowl and mix with the bulgur. Let stand for 20 minutes. Sauté the diced onions until golden brown. While the lentil-bulgur mixture is standing, chop the spring onions and parsley. Stir everything into the lentils and season with salt and pepper. Then stir in the onions, tomato paste, and paprika. Season with jalapeno sauce or a hot sauce of your choice and form into small balls. Serve with garlic yogurt.
