Lentil – Orange – Salad

Ingredients for 4 servings:

  • 75 g lentils, brown
  • 150 ml yogurt (soy yogurt)
  • 1 orange(s), the juice and 1 tsp grated peel
  • 1 tbsp sesame seeds
  • 1 tsp cumin
  • salt and pepper
  • 175 g spinach, fresh, cleaned
  • 2 oranges, segments quartered

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the lentils until tender. Season with salt and pepper and let cool. Combine the yogurt, orange juice, and orange zest. Dry-toast the sesame seeds and cumin seeds in a non-stick pan for about 5 minutes, then stir into the yogurt. Stir in the lentils. Place the spinach on a plate, spread the lentil mixture on top, and surround with orange segments. Serve immediately.
