Ingredients for 4 servings:
- 75 g lentils, brown
- 150 ml yogurt (soy yogurt)
- 1 orange(s), the juice and 1 tsp grated peel
- 1 tbsp sesame seeds
- 1 tsp cumin
- salt and pepper
- 175 g spinach, fresh, cleaned
- 2 oranges, segments quartered
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook the lentils until tender. Season with salt and pepper and let cool. Combine the yogurt, orange juice, and orange zest. Dry-toast the sesame seeds and cumin seeds in a non-stick pan for about 5 minutes, then stir into the yogurt. Stir in the lentils. Place the spinach on a plate, spread the lentil mixture on top, and surround with orange segments. Serve immediately.
