Lentil puree

Ingredients for 2 servings:

  • 200 g lentils, red
  • 1 onion(s)
  • 1 garlic clove(s)
  • ½ bunch parsley
  • 2 tsp tomato paste
  • 150 g yogurt, Greek
  • 2 tbsp olive oil
  • 1 tsp paprika powder, hot
  • 1 tsp turmeric
  • 1 tsp cumin
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Vegetarian

Finely dice the onion and garlic clove and sauté in olive oil over medium heat for 2 minutes. Add the lentils and spices and sauté briefly. Stir in the tomato paste. Pour in 450 ml water and bring to a boil. Cover and cook for about 20 minutes, until the puree breaks down. Stir occasionally. Let cool. Then stir in the chopped parsley and Greek yogurt and season with salt.
