Ingredients for 10 servings:

  • 350 g lentils (mountain lentils or green lentils)
  • 1 small red apple, diced very finely
  • 1 small red bell pepper(s), diced very finely
  • 3 tbsp vinegar (red wine vinegar, very good quality)
  • 1 tsp, heaped mustard, medium hot
  • 1 tsp, heaped honey or alternatively sugar
  • 3 tsp herbal salt
  • lots of salt
  • 5 tbsp germ oil (wheat germ oil)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the lentils thoroughly and cook according to the package instructions, then drain well in a colander. Mix with the apple and pepper cubes. Make a salad dressing from the remaining ingredients and pour over the salad. Let it sit for at least 20 minutes—afterward, season generously with more seasoning if desired. Serve as a starter with some white bread or as a side dish. Tip: The salad tastes best the next day, when it’s moist and well-seasoned.
