Ingredients for 2 servings:
- 1 can of lentils
- 5 spring onions
- 3 tomatoes
- 200 g feta cheese
- 4 tbsp balsamic vinegar
- 2 tbsp olive oil
- ½ tbsp mustard
- e.g. salt and pepper
- ½ bunch parsley

Drain the lentils. Trim the spring onions and slice them into thin rings. Wash and finely chop the tomatoes. Tear, wash, and finely chop the parsley. Dice the feta cheese. Gently mix everything with the lentils. Combine the vinegar, salt, pepper, mustard, and oil to make the dressing and add to the salad ingredients. Sprinkle with parsley. Mix well and let it sit for about an hour. Goes well with grilled food or simply on its own with bread.
