Lentil soup according to mom

Ingredients for 6 servings:

  • 1 package of lentils
  • 1 bunch of soup vegetables
  • 600 g sausages (Mettenden)
  • 2 jars of sausages, in their own skin
  • 2 kg potatoes
  • 3 tsp vegetable broth
  • salt and pepper

Working time approx. 40 minutes; Total time approx. 40 minutes

This is a very simple but delicious lentil soup recipe. Put the lentils (not those that need to be soaked first) in a pot, fill with water, and season with pepper and stock. Cook according to the package instructions (30 to 40 minutes). Meanwhile, dice the soup vegetables (or simply use a small package of frozen vegetables) and add them to the lentils as soon as they are cooked. Pierce the mettenden sausages several times and add them to the boiling lentils. Peel the potatoes, cut them into pieces, and cook with salt and a little stock until tender, then mash them roughly so that there are still small pieces left. When the lentils are tender, remove the mettenden sausages and slice them in the same way as the sausages. Add the mashed potatoes, mettenden sausages, and sausages to the lentils and stir in. Season to taste with pepper, salt, and vegetable stock.
