Lentil Soup with Potatoes, Vegetarian

The perfect lentil soup with potatoes, vegetarian recipe with a picture and simple step-by-step instructions.

  • 1 Onion
  • 4 Potatoes
  • 225 g Green or brown lentils
  • 2 Toes Garlic
  • 800 g Chopped tomatoes or pizza tomatoes)
  • 900 ml Vegetable broth
  • Pepper
  • Salt
  • 50 g Parmesan
  • 1 Bd Parsley
  1. Soak the lentils a few hours beforehand, this will shorten the cooking time.
  2. Dice the onion and sauté in oil. Add the lentils and top up with the vegetable stock
  3. Add the chopped potatoes. Press the garlic and add the tomatoes (either chop or canned) and the spices.
  4. Bring to the boil and simmer for about 40 minutes. Sprinkle with Parmesan and chopped parsley and serve. Good Appetite!
