Ingredients for 3 servings:
- 400 g chicken, cut into small pieces
- 2 carrots, finely chopped
- 1 bunch of spring onions, finely chopped
- 2 garlic cloves, finely chopped
- 2 onions, finely chopped
- 125 g rice
- 200 ml coconut milk, creamy
- 1 liter chicken broth
- 200 ml milk
- 3 tbsp oil
- 5 tsp, heaped curry powder
- ½ tsp ginger powder
- herbal salt
- pepper
- chili
- Paprika powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Sear the sliced chicken in a pan with the oil. Then add the vegetables and toss to coat. Season generously with herb salt, pepper, paprika, curry powder, ginger, and chili powder. Add the broth, milk, coconut milk, and rice to the pan. Simmer for about 15 minutes, season again to taste, and then serve. This dish is for people like me who don’t like the strong coconut flavor and only want/can taste a light coconut note. For all coconut lovers, you can of course replace the specified amount of milk with coconut milk.
