Linguine with Tuscan tomato sauce

Ingredients for 2 servings:

  • 300g linguine
  • 3 vine tomatoes
  • 10 cherry tomatoes
  • 2 shallots
  • ¼ tsp salt
  • tsp sugar
  • 1 tsp tomato paste
  • 1 tsp sambal oelek
  • 2 tsp spread (organic Tuscan spread)
  • Sunflower oil for frying
  • 20 g butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Classic pasta dish, irresistible

Cook the pasta in salted water until al dente. Finely dice the onions and fry them in hot oil. Roughly dice the tomatoes and fry them with the onions. I recommend soaking the tomatoes in boiling water for a few minutes and peeling them. Add the tomato paste and sambal oelek. Season with salt and sugar. Continue frying for several minutes. Once there is almost no liquid left, add a splash of water and the Toscana spread. Turn off the heat and continue simmering until the sauce reaches the desired consistency. Drain the cooked pasta, add butter, and serve with the sauce.
