Ingredients for 4 servings:

  • 3 egg yolks
  • 2 tbsp sparkling wine
  • 200 g butter, chilled, diced
  • some lemon juice
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Beat the egg yolks with the sparkling wine in a bowl over a double boiler until frothy. Gradually add the diced butter and continue beating. Season to taste with pepper and a squeeze of lemon juice.
