Liver pan with vegetables

Ingredients for 4 servings:

  • 400 g veal liver
  • 1 large onion(s)
  • 3 cloves garlic
  • 1 bell pepper(s)
  • 2 carrots
  • 1 small zucchini
  • 50 g tomato paste
  • salt and pepper
  • Paprika powder
  • Flour
  • 100 ml vegetable stock
  • 100 ml red wine
  • 100 g sour cream
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cut the veal liver into small pieces, dust with flour, fry in a pan with oil, and let it simmer briefly. Peel and finely chop the vegetables. In another pan, sauté the onions and garlic in oil and add the remaining vegetables, seasoning well. Add the tomato paste and vegetable stock. Simmer until the vegetables are almost tender. Now add the red wine and simmer for a while. Finally, stir in the sour cream and add the fried liver. This goes very well with mashed potatoes or rice.
