Liver strips with curry and peanuts

Ingredients for 3 servings:

  • 400 g veal liver
  • 40 g clarified butter
  • 4 onions
  • 2 apples
  • 3 tbsp curry
  • 100 ml cream
  • 100 g mango chutney
  • 100 g peanuts
  • 300 g rice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

A quick tip: Soak the liver in buttermilk overnight for a more refined flavor. Dice the liver, coat with flour, and fry briefly in the clarified butter. Remove the liver from the pan and keep warm. Peel and dice the apples, slice the onions, and fry both in the fat. Add the liver back in and add the curry. Deglaze with the cream. Roughly chop the peanuts and add them. Stir in the mango chutney. Season with salt and pepper. Meanwhile, cook the rice according to the package instructions and serve everything over the rice.
