Ingredients for 4 servings:
- 2 kg tomatoes, fresh and fully ripe
- 2 onions
- 2 garlic cloves
- some spice(s) of your choice (salt, pepper, sugar, paprika powder)
- some basil
- Oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 2 hours 45 minutes; Total time approx. 3 hours 5 minutes

Peel and finely chop the onion and garlic, then fry them in a little oil in a pan. Quarter or halve the tomatoes and add them to the onion and garlic mixture. Add a splash of water and spices and herbs (basil, pepper, sugar, salt, paprika) to taste. Let the whole thing simmer on low heat for about 45 minutes, stirring occasionally. Then puree the sauce with a hand blender. Let it simmer for another 1-2 hours, stirring frequently to ensure nothing sticks, and then season to taste. Finally, pour the finished sauce into jars while it’s still hot, close the lids, turn them upside down, and let them cool. This way, the sauce will keep for a very long time and is perfect with pasta, casseroles, or on pizza.
