Low-carb Fanta cake from the tray

Ingredients for 1 servings:

  • 4 eggs
  • 150 g xylitol (sugar substitute)
  • 200 ml safflower oil
  • 200 g almonds, ground
  • 150 g spelt flour
  • 1 packet of baking powder
  • 200 ml Fanta (Fanta Zero)
  • Grease for the tray
  • 200 ml Cremefine
  • 300 g low-fat curd cheese
  • 200 g xylitol (sugar substitute)
  • 1 can of tangerine(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Beat the eggs, oil, and xylitol until creamy. Mix the almonds, flour, and baking powder and add to the egg mixture. Slowly add the Fanta. Place the batter on a greased baking sheet and bake for 15 minutes in a preheated oven at 200°C. Let cool. In the meantime, prepare the cream. Whip the Cremefine until stiff. Add the xylitol, quark, and drained mandarins and mix with a hand mixer. Pour onto the cold base and serve.
