Low-carb ham casserole

Ingredients for 4 servings:

  • 1 broccoli
  • 1 cauliflower
  • 250 g diced ham
  • 600 g cream cheese
  • 8 eggs, size L
  • some chives
  • some herbs, Italian, frozen
  • 1 cup of milk, approx. 200 ml
  • some salt and pepper, optional

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

First, preheat the oven to 150°C (fan/convection oven). Wash the cauliflower and broccoli and cut them into bite-sized pieces. Then, add the eggs, cream cheese, milk, and herbs to a mixing bowl and whisk to combine. Tip: If you like, you can add a little salt and pepper. But be careful, since the ham cubes are very salty, you only need to add a little salt. Cover the bottom of a casserole dish with the cauliflower and broccoli. Spread the egg mixture evenly over the top. Finally, add the ham cubes on top. Bake the casserole in a hot oven for 40 minutes. This dish is ideal for those on a low-carb diet.
