Opsies are a good “bread substitute” for anyone on a low-carb (i.e., low-carb) diet. They don’t really resemble real bread, but they taste very fluffy, which is why they are also called cloud buns. To make the Oopsies, separate the eggs and beat the egg whites until stiff peaks form. Mix the egg yolks with the cream cheese and then carefully fold in the beaten egg whites. If you don’t have cream cheese at home, you can also use quark. Now place four dollops of the mixture on a baking sheet lined with baking paper, sprinkle with some sesame seeds, and bake them in the oven at 180°C for about 15-20 minutes, until the Oopsies have a beautiful golden brown color. Season the ground meat (you can also use mixed ground meat or ground beef—I like ground turkey because it has less fat) with salt and pepper and mix it with the finely diced onion. Then form them into four round meatballs. Fry them in a pan on both sides. Just before they’re done, place a slice of sliced cheese on top of each one to melt slightly. Once the Opsies are done, top them with the remaining ingredients. Per serving: approx. 337 kcal / 21g fat / 5g carbohydrates / 33g protein
