Low-carb strawberry curd cake

Ingredients for 1 servings:

  • 3 eggs
  • 10 g baking powder
  • 150 g margarine
  • 4 tbsp, heaped xylitol (sugar substitute)
  • 400 g almonds, ground
  • 1,000 g low-fat curd cheese
  • 300 g strawberries
  • 50 g dark chocolate chips
  • n. B. Liquid sweetener
  • 1 shot of water
  • some strawberries for garnishing
  • Margarine for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

For the batter, combine the eggs, baking powder, margarine, Xucker, and ground almonds in a bowl and mix well with a mixer. Grease a springform pan with margarine and spread the batter evenly. Bake at 185°C (convection oven) for 35 minutes. For the strawberry quark mixture, beat the low-fat quark with a splash of water until creamy. Wash the strawberries and cut them into small pieces. Add them to the low-fat quark along with the chocolate chips and sweeten with liquid sweetener, if desired. Let the base cool completely and then spread the strawberry quark evenly over the cake base. Decorate as desired.
