Low-fat potato salad

Ingredients for 6 servings:

  • 1.4 kg potatoes
  • 3 spring onions
  • 1 onion(s), red
  • 60 ml rice vinegar
  • 60 ml mayonnaise (yogurt salad cream)
  • 120 ml yogurt (low-fat yogurt)
  • 2 tbsp parsley
  • ½ tsp celery salt
  • Salt and pepper, white

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the potatoes in their skins. Rinse, let cool slightly, and slice. Slice the spring onions and finely chop the red onion. Add to the potatoes along with the remaining ingredients. Mix everything well, season to taste, and refrigerate.
