Ingredients
 

Dough:

  • 4 Egg white Gr. L room temperature
  • 165 g Extra fine sugar
  • 100 g Finely ground almonds
  • 200 g Powdered sugar
  • Food coloring green

Filling:

  • 125 g Butter
  • 90 g Powdered sugar
  • 30 g Pistachio paste
  • 1 Tbsp easy. Sour cream

Instructions
 

Dough:

  • First sieve ground almonds and powdered sugar 1 x separately, mix and then sieve again. Discard any coarser particles left in the sieve.
  • Beat the egg whites with a pinch of salt until stiff. When it starts to set, add the fine sugar in several small portions while whipping. When it is used up, keep beating the egg whites until it shines and a point stops when you pull out the stirring hook. Then color it with the food coloring as desired and gradually fold in the sifted almond mix with a rubber spatula. When all is used up, stir the dough with the rubber spatula again and again until smooth. It has to be tough, shiny and smooth. Then fill into a large piping bag with a hole opening of approx. 8 mm.
  • Line a tray and two other documents with baking paper or foil and put clover-shaped dots on them, always 4 small (about 5 cents in size) in a square and a tiny one in the middle. Smooth the resulting tips with the back of a spoon. Allow the blanks to dry slightly for 30 minutes at room temperature.
  • In the meantime, preheat the oven to 150 ° O / bottom heat. The baking time on the 2nd rack from the bottom is 12-15 minutes. When the typical little feet have formed below, you can get out of the oven.

Filling:

  • Mix all ingredients into a cream. Instead of the pistachio paste, jam or other aromatics (depending on the color and the desired taste) can be used.

Completion:

  • Now line up the shamrocks in pairs. Always one half with the bottom up. Then fill this with the cream, put the second half on it and press it down lightly so that the filling spreads to the edge. Then give the lucky charms away or eat them yourself ..... 😉

Epilogue:
