Lukewarm glass noodle salad with chicken

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 pack of glass noodles
  • 2 red bell peppers
  • 3 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lime juice or lemon juice
  • some salt and pepper
  • some coriander leaves

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

Cut the chicken breast fillet into small pieces. Combine the soy sauce, balsamic vinegar, olive oil, honey, a pinch of salt, and pepper. Add the meat, mix thoroughly, and marinate in the refrigerator for about 1 hour. Core the bell peppers and cut into small pieces. Cook the glass noodles in lightly salted water. Briefly fry the chicken in a non-stick pan, add the bell peppers, and simmer for about 10 minutes. Drain the glass noodles and fold them in. Add the finely chopped coriander. Remove the pan from the heat and let it cool to the desired temperature. Of course, you can also serve the dish warm.
