Ingredients for 2 servings:
- 2 eggs
- 125 g flour
- 125 ml milk
- 125 ml mineral water
- 1 tbsp oil
- 1 tsp salt
- 2 turkey schnitzels
- 1 red bell pepper(s)
- 1 bunch of spring onions
- 1 pack of mung bean sprouts
- 1 pack of dried shiitake mushrooms, 25 g
- ½ jar mango chutney
- 1 can coconut milk, creamy
- 1 pack of curry paste, yellow
- Sauce (Teriyaki)
- Soy sauce (Ketjap Manis)
- 1 tsp sambal oelek
- Olive oil, for frying

For a cozy evening for two – cooked at the table with a wok and crêpe maker!
For a romantic evening, first prepare the ingredients: Soak the shiitake mushrooms in cold water for 1 hour, then boil for 15 minutes. Discard the cooking liquid and quarter the mushrooms. Wash and pat the turkey cutlets dry, then cut into thin strips. Mix with the teriyaki sauce and ketjap manis and let them marinate while you continue preparing. Now prepare the batter. To do this, vigorously beat the eggs with milk, flour, oil, and salt until a batter forms, then stir in the mineral water. Place the batter in a bowl and ladle on the dining table. Cut the bell pepper into thin strips and the spring onions into diagonal rings. Place each ingredient in a small bowl on the table, next to the wok and crepe maker. Pour only the solid paste of the coconut milk into a small bowl and serve with the mango chutney and sambal oelek. First, heat the wok. Heat a little olive oil and fry the turkey strips in it. When the meat is crispy, push it to the side and add the peppers to the wok. Cook for a few minutes, then gradually add the sprouts, mushrooms, and finally the spring onions. When the vegetables are cooked, stir in the meat and season with the coconut paste, curry paste, mango chutney, and a little sambal oelek. Reduce the wok to low heat to keep warm. Heat the crepe maker and lightly brush with oil. Mix the batter well again and cook a nice, thin pancake or crepe on top. Place on a plate, top with the filling from the wok, roll up, and then enjoy as a couple—or wait until the second pancake is ready. Of course, there are many ways to vary the dish with other vegetables or fruit (pineapple). I also really like the fact that you can spice up individual pancakes to taste. It sounds quite time-consuming, but it’s a lot of fun!
