Ingredients for 1 servings:

  • 500 g rhubarb
  • 180 g margarine
  • 80 g sugar
  • 4 egg yolks
  • 300 g flour
  • ½ pack of baking powder
  • 1 tbsp milk, maybe a little more
  • Grease for the tray
  • 4 egg whites
  • 200 g sugar

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel, slice, and wash the rhubarb. Beat the egg whites with 200g of sugar until stiff peaks form. Whisk the margarine, egg yolks, and sugar until fluffy. Combine the flour and baking powder, stir in, and add a little milk if needed (but not too much, as it will be a very stiff dough). Grease a baking sheet and spread the batter on it. Bake at 200°C for about 10 minutes. Then spread the rhubarb over the batter, add the stiffly beaten meringue mixture, and smooth it down. Bake at 175°C for another 20 minutes.
