Recipe 1: Make burger buns with sesame yourself

One of the most popular burger buns is without a doubt the soft, juicy buns with sesame seeds on top.

  • Ingredients for eight burger buns with sesame: 3 tbsp warm milk, 200ml warm water, 2 tsp dry yeast or a little fresh yeast, 2.5 tbsp sugar, two eggs (size M), 425g flour (type 550), 60g flour (type 405), 1.5 tsp salt, 80g soft butter and sesame
  • In the first step, mix the warm water, warm milk, sugar, and yeast in a bowl. Let the dough stand for about 15 minutes.
  • Meanwhile, crack an egg.
  • Then mix the flour with the salt. Add the butter and knead everything with your fingers until small crumbs form.
  • Mix the yeast mixture and the egg into the crumb mixture with a wooden spoon. Knead the dough well for ten minutes. It’s perfect when it has a silky sheen.
  • Cover and let the dough rise in a warm place for about an hour.
  • Then form eight rolls from the dough and place them on a baking tray lined with baking paper. The dough pieces rest there for another hour.
  • Set the oven to 200 degrees and place a bowl of water on the bottom of the oven.
  • Mix the second egg with a tablespoon of water and brush the buns with it. Finally, the sesame comes on it.
  • Bake the burger buns for about 15 minutes until golden brown. Then let it cool down and then enjoy.

Recipe 2: Classic Hamburger Buns

Of course, the classic hamburger bun should not be missing. Here is a recipe suggestion.

  • You need this for about twelve hamburger buns: 200ml warm water, 4 tablespoons milk, a cube of fresh yeast, 35g sugar, 8g salt, 80g soft butter, 500g flour (type 550), an egg (size M), plus another egg and 2 tablespoons each of milk and water for the glaze
  • First, put the warm water and milk in a bowl and mix it with the sugar and yeast. Knead well and let the mixture stand for five minutes.
  • After the resting time, add the remaining ingredients for the dough: flour, salt, an egg, and the softened butter. Knead everything into a smooth dough. Then let the dough rest covered in a warm place for about an hour.
  • The next step is to form the burger buns from the dough. To get the perfect size for the classic burger bun (nine centimeters in diameter), use 80 to 90 grams of dough per bun. In this case, the amount of dough is enough for about eleven to twelve hamburger buns.
  • Roll the dough into an even ball in the palms of your hands and then press it into a flat disc on a baking tray lined with baking paper. This disk should be eight to nine centimeters in diameter.
  • Tip: If you want an all-around perfect burger bun, you can bake the buns in burger rings with a diameter of ten centimeters. This will give you several buns of the same size, like from the burger restaurant.
  • The dough pieces have to rest for another hour. Meanwhile, whisk the second egg with 2 tablespoons of water and 2 tablespoons of milk. Spread the batter over the buns. This gives a nice shine to the buns.
  • Caution: Egg and milk should be at room temperature. If they are too cold, the buns can collapse.
  • Bake the rolls in the oven at 200 degrees (top/bottom heat) for about 15 to 20 minutes. The buns are done when the top is golden brown. Allow everything to cool on a wire rack before topping the buns.

Recipe 3: Whole Wheat Burger Buns

Wholemeal buns are perfect for giving your burger that certain pep. Or maybe you want to have a vital burger with chicken and lettuce. Here is our recipe suggestion.

  • For six wholemeal rolls, you need 100ml lukewarm water, 2 tablespoons milk, half a cube of fresh yeast, 1 tablespoon sugar, a pinch of salt, 2 tablespoons rapeseed oil, 175g wholemeal spelled flour, 125g wheat flour (type 550), a small egg; For brushing you need: 2 tablespoons of water, 2 tablespoons of milk, a small egg and grains for sprinkling such as sesame, sunflower seeds or linseed.
  • In the first step, mix water, milk, and sugar in a bowl. Then crumble in the yeast and whisk until the yeast has dissolved. Let it stand for five minutes.
  • Meanwhile, mix the flours with the salt. Then add the flour mixture, rapeseed oil, and a small egg to the dough and knead everything for ten minutes.
  • Then let the dough rise in the bowl, covered, for an hour in a warm place.
  • After the hour, knead the dough briefly again on a floured surface. Shape it into an eight-centimeter thick roll and cut it into six equal parts.
  • Use your hands to form round rolls from the individual pieces of dough, which you then place on a baking tray lined with baking paper.
  • Cover the raw dough pieces with a clean kitchen towel and let them rise in a warm place for another hour.
  • Mix the second egg with the milk and water and brush the buns with it. Finally, the grains are added and the whole thing is baked in the oven at 200 degrees for ten to 15 minutes.
