Make Metaxa Sauce Yourself: Delicious Recipe for the Greek Barbecue Sauce

You can easily make Metaxa sauce yourself. It goes well with a wide variety of dishes and is a great companion, especially during the barbecue season. We have therefore summarized three recipes for you in this kitchen article.

Make Metaxa sauce yourself: the classic version

Metaxa sauce is not difficult to make. Since the sauce tastes good with all kinds of dishes, it can be used in many ways. Serve them, for example, with grilled dishes, meat, vegetables or gyros.

  • Ingredients : 1 red pepper, 1 clove of garlic, 1 onion, 150 g mushrooms, 2 tablespoons tomato paste, 400 g canned tomato pieces, 150 ml Metaxa , 200 g crème fraîche, some olive oil, as well as pepper and salt.
  • Preparation : Clean the onion and the pepper and dice both finely. Heat the olive oil in a pan and sauté the diced vegetables in it. Then add the garlic.
  • Push the vegetables aside and put the tomato paste in the middle. Sauté it briefly. Mix well and season with salt and pepper to taste.
  • Add the tomatoes to the pan and fry them for a few minutes. Erase everything with Metaxa. Allow to evaporate and simmer for another 20 minutes.
  • Remove the sauce from the heat and finely puree it with a hand blender. If necessary, season the sauce again with salt.
  • By the way : Metaxa sauce also goes well as a sauce for meatballs.

Metaxa sauce with cream

This variant of the Metaxa sauce goes well with pasta dishes. If you like, you can also serve rice with it. Tip : We will explain how to cook sustainably in another article.

  • Ingredients : 150 ml Metaxa, 200 ml broth, 150 ml cream, 1 tsp cornstarch.
  • Preparation : Put the broth and cream in a saucepan. Bring the mixture to a boil.
  • Then add Metaxa. Let the mixture continue to simmer so that the alcohol can evaporate.
  • Finally, mix in the cornstarch while stirring. Make sure all lumps dissolve.
  • Let the sauce continue to simmer until thickened.

Vegan Metaxa sauce

Metaxa sauce also works vegan. That’s how it works:

  • Ingredients : 2 cloves of garlic, 2 onions, 2 tablespoons of rapeseed oil, 4 tablespoons of tomato paste, 800 g of canned tomatoes, 1 pinch of sugar, 150 ml of Metaxa, 2-3 sprigs of oregano, ½ bunch of thyme, salt, pepper.
  • Preparation : Clean the onion and the garlic. Dice them up. Pluck off the thyme leaves and wash them.
  • Heat the canola oil in a saucepan. Sauté the garlic and onion in it. Deglaze the onions with Metaxa.
  • Add the tomato paste. Let it cook for a while. Then add the tomatoes.
  • Add the sugar. Also add the thyme and oregano leaves. Also season the sauce with salt and pepper. Let them simmer for another ten minutes before serving.
