Make Sambal Oelek yourself – a simple recipe

Sambal Oelek consists mainly of chili peppers, with ingredients such as vinegar or salt added for longer shelf life. The seeds of the chilies are not removed, which makes the paste particularly flavorful. You need the following ingredients: 250g small red chili peppers, 1 tbsp good quality olive oil, 2 tsp fresh lemon juice, 2 tsp white wine vinegar, 2 tsp sugar, and 1 tsp salt

  1. First, wash the chili peppers thoroughly before removing the stalks and cutting the pods and seeds into small pieces. Set aside a small portion of the chopped pods.
  2. The pieces of chili (except for the ones that have been set aside) are now boiled over low heat with about 100 ml of water and with the lid closed for eight minutes until soft.
  3. Then pour the cooked chilies into a sieve and let them drain. Then put them in a blender with the pieces of chili you have set aside, the vinegar, the oil, sugar, and salt (a hand blender can also be used, but then the mixture will be a lot finer).
  4. Process the ingredients into a paste that is still slightly chunky and fill this into an airtight, sealable jar that has been cleaned beforehand. Your homemade, healthy sambal oelek will keep in the fridge for up to a month.
