Vegan protein bars: 5 ingredients for the perfect power snack

This vegan protein bar recipe only needs a few ingredients, is quick to make, and combines high-protein almond butter with protein powder. The ingredients: 270g tender rolled oats, 4 scoops vegan protein powder (preferably made from brown rice), 240g almond butter, 300g brown rice syrup or a similar thick syrup, 1 to 3 tablespoons plant-based milk (depending on desired consistency) and optional vegan chocolate chips. How to proceed:

  • In a large bowl, combine the oatmeal with the protein powder.
  • Now add the syrup and almond butter to a small bowl and microwave until the ingredients are runny and blend easily.
  • Alternatively, you can also perform this step in a water bath.
  • Now mix the liquid ingredients and the dry ones. If necessary, you can gradually add a tablespoon of plant-based milk.
  • Pour the mixture into a flat silicone mold measuring 25cm x 25cm or line your conventional mold with baking paper beforehand.
  • Optionally, you can melt the chocolate in the microwave or a water bath and carefully drizzle it over the bars.
  • Place the mixture in the fridge for 25 minutes (or until it sets) and then divide it into 20 equal bars.

Without baking and cooking: raw protein bars

Packed with healthy fats, natural protein and natural sweetness from dates, this recipe uses only raw ingredients for extra nutritional integrity. The ingredients for this delicious recipe: 350g dates, 70g unsalted almonds, 30g sunflower seeds, 30g pumpkin seeds, 50g raw hemp seeds, the juice of half a lemon, 30g goji berries, 2 scoops vegan protein powder.

  1. Place the almonds in a food chopper or food processor and grind the almonds into a fine flour.
  2. Now add the dates and mix them as well until the two ingredients have blended.
  3. In the next step, add the hemp seeds, sunflower seeds and pumpkin seeds as well as the lemon juice and goji berries and pulse the ingredients into the almond and date mixture. You will then get a sticky but firm dough.
  4. Press this dough into a flat baking pan. A dampened hand helps to keep the dough from sticking to your hands.
  5. Place the mixture in the fridge for 30 minutes, then cut into equal-sized bars.
