Ingredients for 6 servings:
- 150 g ladyfingers
- 70 g butter
- 75 ml milk
- 500 g natural yogurt, whole milk
- 50 g sugar
- 1 lemon(s) (organic), zest
- 2 packs of gelatin powder, possibly more
- 12 tbsp water, cold
- 850 g mango(s) (slices) from the can
- ½ tsp nutmeg, freshly grated
- Butter for the mold
- 500 ml passion fruit juice, if desired
Instructions

wonderfully fresh and fruity, perfect for hot summer days
Grease the bottom and sides of a 23 cm springform pan well with butter. Break up the sponge fingers with your hands. Melt the butter and add the crumbled sponge fingers. Spread the mixture on the bottom of the springform pan and press down firmly so that the base is no longer visible and the mixture holds together firmly. Chill for 10 minutes, until the mixture sets. Mix the milk, yogurt, sugar, and lemon zest. In a cup, mix the gelatin powder with 6 tablespoons of cold water and let it swell. Then place the cup in boiling water until the gelatin is liquid and clear. Let cool slightly. Add one tablespoon of the yogurt mixture to the gelatin, mix, and then add the yogurt-gelatin mixture to the yogurt mixture. Spread everything on the bottom and chill for 1 hour to set. Drain the mango slices and cut about 1/4 into roughly 1 cm pieces, then puree the rest. Season with nutmeg. If you like, you can add a little more sugar. I don’t, as the base is quite sweet and I find this slight acidity very refreshing on warm summer days! Dissolve the gelatine as described above, let it cool slightly, and add it to the mango puree. Then add the mango pieces. I then add 500 ml of passion fruit juice, but then also use 1/2 an extra sachet of gelatine! This can easily be omitted, though. Pour the mixture onto the yogurt topping and refrigerate for 2-3 hours to set! Wonderfully fresh, fruity, and tart for hot summer days! This 3-colored cake looks simply beautiful, and the lovely yellow color also puts you in a good mood.
