Ingredients for 2 servings:

  • 2 small cucumbers
  • 125 g blueberries
  • 2 tbsp olive oil
  • 1 tbsp raspberry vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 tsp spice(s) (crushed herb pepper)
  • some salt

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

fine as a side dish to hearty bread

Peel the cucumbers and slice them into slightly thicker slices. Sort the blueberries. Place the cucumbers and berries in a bowl or divide them into small side dishes. Thoroughly mix the marinade ingredients, pour over the cucumbers and blueberries, and let it marinate for at least half an hour. This fruity, delicate side dish tastes great with hearty ham or cheese sandwiches.
