Marinated herring with boiled potatoes

Ingredients for 2 servings:

  • 300 g fish (matjes herring)
  • 1 large onion(s)
  • 2 apples
  • 5 cucumber(s) , (pickles) and some liquid
  • 3 carnations
  • 5 juniper berries
  • 1 bay leaf
  • pepper
  • 100 ml cream
  • 100 ml milk
  • ½ tbsp mayonnaise

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

White herring salad

Cut the herring fillets into pieces. Peel the onion and slice into rings. Core the apples, cut them into eighths, and slice them. Slice the pickled gherkins. Place everything in a bowl and season with cloves, juniper berries, bay leaves, and pepper. Then add the vinegar water, cream, milk, and mayonnaise and mix everything together. Let it simmer for at least 3 hours. We serve it with boiled potatoes. The amounts of onion, apples, and pickled gherkins can be adjusted to taste. I sometimes substitute peppercorns for the pepper.
