Ingredients for 4 servings:
- 1 turkey leg(s) (thigh)
- 2 garlic cloves
- ¼ liter buttermilk
- 1 chili pepper(s)
- 10 sage leaves
- Salt and pepper, white, ground
- 3 tbsp oil
- 500 g leek, cleaned, cut into rings
- cornstarch
- Tomato paste
Instructions
Working time approx. 40 minutes; Rest period approx. 1 day; Total time approx. 1 day 40 minutes
Finely chop the garlic cloves and mix with buttermilk, chili pepper, sage leaves, and pepper. Marinate the turkey leg for 24 hours, turning once. Preheat oven to 200°C (400°F). Remove the meat from the marinade, pat dry, season with salt and pepper, and place in a roasting pan. Pour 3 tablespoons of oil over it and roast in the oven for 30 minutes. Add the leek rings and continue roasting for about 40 minutes. Pour in the marinade, bring to a boil, thicken with cornstarch, and season with tomato paste and pepper.
