Marzipan-almond wafers

Ingredients for 1 servings:

  • 160 g butter
  • 160 g sugar
  • 2 packets of vanilla sugar
  • 6 m.-sized eggs
  • 550 g flour
  • 1 packet of baking powder
  • 700 ml milk
  • 200 g marzipan paste
  • 70 g almonds, chopped
  • e.g. cinnamon
  • n. B. bitter almond aroma
  • Butter, for greasing

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Cream the soft butter with the sugar and vanilla sugar until fluffy. Finely chop the marzipan and whisk it into the butter and sugar mixture. Gradually beat in the eggs until everything has a creamy consistency. Mix the flour with the baking powder and then add it alternately with the milk in small amounts and mix thoroughly to form a thick dough. Fold in the almonds. Season to taste with bitter almond flavoring (I love this flavor) and cinnamon. Let the dough rest for about half an hour and then bake in batches in a waffle iron. Tip: They taste best hot from the waffle iron dusted with powdered sugar or with cream and hot cherries. We like to eat them with a scoop of vanilla ice cream. You can use nuts instead of almonds. This recipe makes about 20 rectangular waffles. Either you have a big family or you can store the leftovers in a tin for the next few days.
