Mashed potatoes with bacon, onions and tomatoes

Ingredients for 4 servings:

  • 1 kg potatoes, floury
  • 4 onions
  • 200 g smoked and streaky bacon
  • 4 tbsp sugar
  • 5 tbsp Aceto balsamico, darker
  • 4 tbsp butter
  • Pepper, mixed or black, freshly ground
  • 250 g cherry tomatoes
  • 1 tbsp olive oil
  • 200 ml milk
  • Parsley, flat

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

e.g. as a side dish to meatballs or as a main course

Peel and wash the potatoes, dice them finely, and cook them in boiling salted water for about 15 to 20 minutes. Peel the onions and slice them into thin rings. Dice the bacon finely. Fry the bacon cubes in a pan without adding any fat until crispy. Then remove them and drain them on kitchen paper. Fry the onion rings in the hot bacon fat for about 5 minutes; sprinkle with the sugar and let them caramelize. Deglaze with the balsamic vinegar, add 1 tablespoon of butter, and season with pepper. Wash, trim, and halve the cherry tomatoes. Heat the olive oil in a pan and sauté the halved cherry tomatoes for about 3 minutes. Heat the milk and 3 tablespoons of butter in a saucepan. Drain the potatoes, pour the milk and butter mixture into the potatoes, mash until puree, and add a little salt. Arrange the mashed potatoes with the bacon cubes, onion rings and cherry tomatoes on plates and garnish with some parsley.
