Matcha muffins with white chocolate

Ingredients for 1 servings:

  • 90 g flour
  • 60 g sugar
  • 70 g butter
  • 1 egg(s)
  • 30 g whipped cream
  • ½ tsp baking powder
  • 1 tsp, heaped Matcha tea
  • Chocolate, white, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

For 8 normal or 12 small muffins for Japan friends

Sift the flour with matcha and baking powder, let the butter become very soft or melt it over low heat. Beat the egg, add the sugar and butter, then gradually mix in the flour mixture. Add enough heavy cream or milk to make a batter that is difficult to break. Finally, fold in chopped white chocolate, if desired. Bake on the middle shelf at 180°C or gas mark 3 for about 25 minutes. I bake in a very old gas oven, so the baking times have to be adjusted individually! The muffins should only brown slightly around the edges so that the beautiful green color is not lost! Cool on a wire rack. Matcha is Japanese green tea powder, available in any well-stocked Asian shop or larger supermarket. Quality and price vary from variety to variety; the more expensive ones are a bit more intense in color, but they taste just as good when baked. When it comes to chocolate, it’s better to go for a high-quality product. Since we love the Kit Kat from Japan with matcha and white chocolate, I decided to try a recipe with matcha to surprise my husband.
