Maultaschen with peppers

Ingredients for 2 servings:

  • 3 red bell peppers, diced
  • 4 Maultasche(s) (approx. 360 g), cut into half strips
  • 1 onion(s), diced
  • 1 garlic clove(s), chopped
  • 1 tbsp oil
  • 1 tbsp tomato paste
  • 1 tsp sweet paprika powder
  • ½ tsp chili powder
  • 50 ml vegetable stock
  • ½ cup crème fraîche with herbs (light)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Fry the Maultaschen in oil in a large pan until nicely browned. Remove from the pan. Add the onion and garlic and sauté until translucent. Add the bell peppers, broth, tomato paste, and seasonings and sauté until cooked through. Return the Maultaschen and stir in the crème fraîche. Season to taste and serve immediately.
