Meat: Manzo Trottato Beef with Trout Sauce

  • 500 g Tafelspitz – leftover from my beef broth
  • 200 g Mildly smoked trout fillet
  • 50 g Capers
  • 2 piece Egg yolk
  • 50 ml Safflower oil
  • 1 Splash Lemon juice
  • Pepper and salt
  • Some beef broth *
  1. Cut the cooked beef into very thin slices.
  2. Put the egg yolks in a tall vessel, add the oil and pull up to a mayonnaise with the magic wand.
  3. Add trout fillets and capers and puree. Dilute with the beef broth.
  4. Season to taste with salt, pepper and lemon juice.
  5. Arrange the beef on plates and pour the sauce over them.
