- 500 g Tafelspitz – leftover from my beef broth
- 200 g Mildly smoked trout fillet
- 50 g Capers
- 2 piece Egg yolk
- 50 ml Safflower oil
- 1 Splash Lemon juice
- Pepper and salt
- Some beef broth *
- Cut the cooked beef into very thin slices.
- Put the egg yolks in a tall vessel, add the oil and pull up to a mayonnaise with the magic wand.
- Add trout fillets and capers and puree. Dilute with the beef broth.
- Season to taste with salt, pepper and lemon juice.
- Arrange the beef on plates and pour the sauce over them.
