Meatball quiche without a base

Ingredients for 2 servings:

  • 500 g minced meat
  • 1 can of tomato paste
  • salt and pepper
  • Paprika powder
  • Garlic granules
  • 1 thick leek(s), or 2 small
  • 1 small onion(s)
  • 3 eggs
  • 1 pack of cottage cheese
  • 1 pack of sheep’s cheese
  • Fat, for frying

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Low-carb, Dukan, SIS, Low Carb, but still totally delicious!

Cut the leek into half rings, not too thick. Peel and finely chop the onion. Fry in a little fat until translucent. Add the minced meat, season generously with salt, pepper, paprika, and garlic, and fry until crumbly. Then add the tomato paste and stir in well. Add the leek and sauté briefly. Then remove the pan from the heat and let everything cool slightly until it is no longer completely hot. Line a dish with baking paper. Preheat the oven to 200°C. Mix together the cottage cheese, about 1/3 of the feta cheese, and the eggs. Stir into the minced meat and pour everything into the dish. Sprinkle with the remaining feta cheese. Bake in the oven for about 30 minutes, until the cheese is nicely browned.
